Fish Guizad (steamed fish curry)


1) Cut two onions and two tomatoes into thick rings.
2) Wash and clean fish. Cut  cleaned fish into big pieces and apply salt to the fish.
3) Heat one teaspoon of oil in a pan and add to it one clove of crushed garlic; onions and tomatoes. 
4) Next add the fish pieces. Close the pan and let the fish cook for a few minutes.
5) Pour one cup of water to the fish. And add to it a a pinch of turmeric, 2 or three cloves, and a few leaves of fresh coriander(optional).Add more salt if needed.
6) Let the curry boil till the fish is cooked.
7)Turn off the flame and serve hot with rice.

You can use either King fish,or Mackerel, or Pomfret, or Red Snapper, or Cod in the recipe above.

Fish pot recipe


Ingredients:
3 cod fillets(skin removed)
3 large potatoes cut into thick slices
3 tomatoes quartered
2 onions cut into thin slices
a pinch of turmeric
2 cloves of garlic(skin removed)
3 cloves
3 tablespoons of cooking olive oil
Salt to taste
A few leave of fresh green coriander or parsley
1 cup water

Preparation:
Place pan on low fame and pour oil into it. Heat the oil  for a couple of minutes and add to it chopped flakes of garlic. Put in the onion slices in such a way that it covers the bottom of the pan. Place the cod fillet on the onion slices and cover with potato slices and tomato quarters. Finally add water, turmeric, cloves, salt, and coriander or parsley. Cover the pan and let it cook for at least 20 to 30 minutes or till the potatoes are soft and the cod is cooked.
Serve hot with lettuce or green salad and bread.

Goan Beef Cream Chops


Ingredients:
6 thin slices of beef steak fillet
tablespoon ginger-garlic paste
1 teaspoon green chilly paste(you can either make it at home by grinding green chillies, please remember to remove seeds before grinding the chillies into paste! or you can use ready made green chilly paste)
6 tablespoons of vinegar
Salt as per taste
Cornflour
Semolina(rava) or bread crumbs for coating
1 beaten egg
Oil for frying
Method: Prepare marinade sauce by mixing together vinegar, ginger-garlic and green chilly paste. Add salt as per taste. Soak beef steak fillet in the marinade sauce  for at least an hour. Then slightly pound each fillet to flatten it.
When you are ready to cook the beef fillet. Spread two tablespoonsof cornflour on a board and coat each fillet in cornflour. Press the cornflour coated fillet betwen your palms and  then dip in  the beaten egg and coat with Semolina(rava) or bread crumbs.
Once again, press  the fillet between your palms and re-dip it in the beaten egg. Again coat with Semolina(rava) or bread crumbs. Repeating this step gives a thick creamy, crumbly crust to the fillet steak.
Heat oil in a pan and fry each fillet on both sides.
Serve hot with bread and salad.

The same recipe can also be used for pork chops.

Beef,Bacon, and Onion -one pot recipe


Cook a deliciously satisfying dinner without dirtying too many pots and pans with this one pot recipe.

In a thick bottom pan, pour a tablespoon of olive oil. Let the oil heat on a low flame(it should take a couple of minutes). Remove skin of two garlic flakes, slightly crush the flakes and add to the heated oil. Cover the entire bottom of the pan with a spread of thinly cut onion rings, on top of this place a layer of bacon slices.

Cut very thin slices of beef fillets and place on top of the bacon layer. Put another layer of bacon slices over the beef fillet. In this way, make at least three to five layers of beef and bacon slices. The end or topmost layer should be of  beef.

Cut thick slices of potato. You may also like to add a a few slices ofcarrots and green peas(for a great variety of vegetables). Arrange the potato slices(and carrot and peas) on top of the beef layer.Sprinkle a handful of chopped fresh coriander(optional) and pepper. Close the pan tightly and let it cook on slow flame till done.

The meat takes about 45 minutes to one hour to cook(well done) on low flame. When ready, turn off the flame and serve hot, plain or with bread.

Goan Rava Fried Fish Recipe



Ingredients:
Fish fillets(of kingfish or snapper or whole fish like mackeral cleaned and insides removed)
Turmeric
Red Chili Powder
Lime juice
Salt
Beaten egg
Cornflour or rice flour for dusting(optional)
fine semolina or rava
half cup vegetable oil for frying
Method:Prepare a marinade using juice of one lime or lemon, 1 teaspoon of turmeric powder and 1 teaspoon of Red Chili Powder, and salt(as per your taste, but of course!). Marinate fish fillets in the prepared lemon(lime) juice and spice sauce for a short while, about 30 minutes.
When you are ready to fry the fish, dip each fillet in beaten egg and then coat each side lightly with corn/rice flour(optional, you may choose to skip this step), before coating fillet fully with semolina.
Heat oil in pan and fry fish on both sides.
Serve hot with salad.


Succulent Pork Chops and Crusty Ribs (Goan Recipe)


For 6 large pork chops you will need 1 cup of vinegar, three heaped tablespoons of recheido(a fiery hot marinade made with red chillies and spices ground in  vinegar), 1 teaspoon of sugar, and salt as per taste. Marinate pork chops in vinegar(preferably coconut toddy vinegar) and recheido masala. Apply salt to the chops before soaking them in the marinade.
Leave the chops in the recheido marinade overnight or for at least 4 to 5 hours.  When the chops are ready to fry, heat 1/2 cup oil or pork lard in a pan and fry chops till done.
Serve hot with fried potato chips or a crusty loaf of bread. In Goa, pork chops stuffed into a pav(small loaf of the unique Goa bread) with salad and gravy are a popular street food!
Crusty Pork Ribs
Ingredients:
12 pork ribs
1 tablespoon ginger-garlic paste
1 teaspoon green chilly paste(take five green chillies, remove seeds, and grind into a paste)
6 tablespoons of vinegar
Semolina(rava) or bread crumbs  
1 beaten egg
Oil for frying
Method: Prepare marinade by mixing together vinegar, ginger-garlic and green chilly paste. Apply salt to the pork ribs and pour over the marinade sauce on the ribs. Leave the ribs to marinate in the sauce for one or two hours.
When ready to fry, dip each pork rib in the beaten egg and coat with Semolina(rava) or bread crumbs. 
Heat oil in a pan and fry the pork ribs in it. Serve hot, plain or with red chilli pepper sauce and cabbage salad.
